Ours starts as two-stage filtered water, chlorine and off-tastes pulled out until there's nothing left but clean. We chill it cold, because cold water drinks in carbonation, then press it hard on the Aarke — a step past standard, for a fizz that actually bites. Bottled sparkling has been going quietly flat in a warehouse for months; ours is minutes old, and you can taste the difference in the sharpness.
