Italian Soda is fizz, built to order. Every one starts with our own sparkling water — filtered, chilled, and carbonated on the Aarke minutes before it hits your cup, pressed hard so it bites through ice. Then the syrup goes in last, poured over the top so it sinks through the bubbles in ribbons — cane-sugar syrups, and a grenadine made with real pomegranate juice, never neon. Add a cream float and watch it marble down. We don't stir them behind the bar: the layers are the point, and the first pull of the straw is yours. No cans, no fountain guns, no shortcuts. Just fresh fizz, real cane sugar, and cold. Built in layers. Mixed by you.

The board:

• Blood Orange Sunrise — blood orange over sinking grenadine. The gradient does the talking.
• Raspberry Vanilla Cream — the classic. Raspberry and vanilla under a cream float that marbles all the way down.
• Tropic Twist — passion fruit and pineapple. Summer in a clear cup.
• Island Cream — pineapple, vanilla, cream float. Drinks like pineapple soft-serve.
• Peaches & Cream — peach with a whisper of vanilla, cream floated on top.
• Vanilla Cream Soda — the old soda-fountain standard, made the fresh way.
• Espresso Soda — vanilla and sparkling, then a fresh-pulled double shot floated dark-over-light. Where the espresso machine meets the Aarke.
• Shirley Temple — grenadine and fizz.
